  • 4 shallots, finely chopped

  • 1/2 lemon, for juice

  • 2 tablespoons of extra virgin olive oil

  • Salt and freshly ground black pepper, to taste

  • 1 pinch of Espelette pepper (optional, for a little spice)

Instructions

Preparing the parsley

  • Start by lighting your brazier

  • While the brazier is heating, prepare the knives. Rinse them thoroughly with cold water to remove the sand. You can soak them in salt water for a few minutes to help expel the sand.

  • Once the knives are clean, drain them and place them in a large salad bowl.

  • In a small bowl, mix the chopped shallots, chopped fresh parsley, lemon juice, olive oil, salt, pepper and, if desired, a pinch of Espelette pepper.

Cooking knives in the brazier

  • When the brazier is ready, place the knives on the plancha. Make sure the cooking plate is hot.

  • Cook the razor clams for about 3 to 5 minutes on each side, until they open and the flesh is opaque.

  • Pour the shallot and parsley mixture over the knives. The shellfish must be well coated with the parsley.

  • Don't forget to turn them halfway through cooking for even cooking.

Service

  • Serve the razor clams hot, sprinkled with additional fresh parsley and accompanied by lemon wedges.

  • Serve them with toasted bread to drizzle the delicious sauce.
