Ingredients
For this recipe you need a cast iron pan with a diameter of less than 20cm.
200g flour
1 pinch of salt - 25 g of sugar
4 eggs (separate the whites from the yolks)
100g melted butter
30 cl of semi-skimmed milk 1
Instructions
Preparing the pancake batter
Mix 1/3 of the flour with the salt, sugar and egg yolks.
Add the melted butter. Then add alternately the rest of the flour and the milk.
Beat the egg whites until stiff and gradually add to the rest of the mixture.
Cooking pancakes in a brazier
Once your brazier is hot, place your pan on our paella rack or on your plancha.

Once your pan is hot, add a ladleful of pancake batter. Remove it when it is golden brown and repeat the operation.
You can also flambé the pancakes on the brazier with the alcohol of your choice, here we recommend Vanilla Rum.
Service
Serve the pancakes warm with caramel, chocolate, chestnut cream, lemon sugar and more!
